Favorite Beef Stew

I totally love this recipe. I found it at “Slow Cooker Casseroles & More” on page 230. However, you do not have to cook it in a slow cooker if you do not wish to. I am not always big on beef stews with a strong red wine taste, so I love this non-red wine version. If you consider most vegetable to be unlimited than the only calories you will need to worry about is the beef, potatoes and beef broth.

~~FAVORITE BEEF STEW~~

INGREDIENTS: 
3 Carrots, Chopped
3 Celery Sticks Chopped
2 Large Potatoes Chopped
1.5 cups of onions, chopped
3 cloves Garlic minced
1 Bay Leaf
4.5 Tsp. Worcestershire Sauce
.75 (3/4) Tsp. Dried Basil
.75 (3/4) Tsp. Dried Thyme
.5 (1/2) Tsp. Black Pepper
2 Pounds of Lean Beef (You can get pre-cut stew meat, any cut of lean beef or 2 pounds of lean ground beef—calorie count will of course change as to which meat you choose.)
1 Can (14.5 oz.) Diced Tomatoes, Undrained
1 Can (14.5 oz.) Beef Broth (You can substitute with 1.5 cups of water and powdered beef bouillon.)

For the slow cooker:
Layer ingredients in the follow order starting with: Carrots, Celery, Potatoes, Onions, Garlic, Bay Leaf, Worcestershire Sauce, Thyme, Basil, Pepper, Beef, Tomatoes with juice and beef broth. Cover and cook on LOW for 8 to 9 hours. Ready when carrots and potatoes are soft.

Since I am not big on celery I sometimes removes the celery and double up on carrots. You can also experiment with different vegetables. Be careful some vegetables drastically change the flavor of the stew such as bell peppers.

The stew makes 7 servings. Each serving is approximately 376 calories with only 20%. When determining the calories for this recipe once you choose the meat find out how many calories equal 4.5 ounces of the chosen beef. By going to Calorie King you can search for a large number of foods and how different ways of cooking the food changes the calorie count. While there you can also look up some of your favorite restaurants and found out how many calories, carbs, fats, etc. is in your favorite menu items. Well, maybe you don’t want to know.
